IPA, QUINDIO, COLOMBIA - FACTS
This coffee is organically grown and sustainably sourced from the Sebastian Ramirez coffee farm in Colombia. Sebastian is a 4th generation coffee farmer who's not afraid of experimentation. This coffee truly pushes the boundaries of coffee processing and the impact farmers can have on the flavor of their product.
Once harvested, the coffee cherries are sealed in tanks that are filled with CO2 where they're left to undergo carbonic maceration for 100 hours, while controlling the pH and temperature. Then the coffee cherries are removed from the tanks, depulped, and added back in the tanks for another 100 hours along with an inoculate of hops/mosto culture.
After the second fermentation, the coffees are washed and laid out to dry in open patios for up to 30 days and until humidity has reached 11%. The coffees from Sebastian Ramirez are mostly enjoyed in Europe and Asia, so we're proud to roast such a supernatural coffee in Florida.
We roast this coffee in Sarasota, FL and believe we created a masterful example of experimental processing that has clear tasting notes of Lemongrass, Citrus and Hops.
