This coffee is a masterful example of experimental processing that has clear tasting notes of Lemongrass, Lime, and Green Tea. The coffee is handpicked at peak ripeness, then sealed in stainless steel where it will undergo carbonic maceration for 100 hours. It is then depulped and resealed with the addition of hops for another 100 hours before being dried on open patios for 30 days.
